How can I backup using Zextras Backup on a separate SAN volume.

In order to store ZeXtras Backup's data on your SAN you just need to mount the remote path on your server and set the 'Backup Path' within the ZeXtras Administration Zimlet to a directory in such volume.
Depending on your SAN and setup this can be done in multiple ways - if possible I strongly suggest to do so at hypervisor level by creating a new vdisk on the SAN and connecting it to the Zimbra server, but if this is not possible you can usually remotely mount the volume as an NFS share...

If neither solution is possible or viable, you can always copy the local Backup Path to a remote location using rsync as described in the 'Taking additional/offsite backups of ZxBackup's datastore guide.
